Ingredients
1 lb spaghetti or linguine (the threads of fate!)
2 tbsp olive oil
1 medium red onion, finely diced
4 cloves garlic, minced
1 tsp red pepper flakes (for a touch of fiery passion)
1 (28 oz) can crushed tomatoes (San Marzano for superior depth)
1 large roasted red bell pepper (from a jar or roasted fresh), pureed
1/4 cup beet juice (for intense, mystical crimson color)
1/2 cup dry red wine (optional, for even richer complexity)
1/2 tsp dried oregano
Salt and freshly ground black pepper, to taste
1/2 cup reserved pasta water
Fresh basil leaves, chopped (for garnish and a burst of freshness)
Grated Pecorino Romano or Parmesan cheese, for serving (the binding magic!)
